This year’s Mother’s Day was on May 10th. All of the children were at home. Lauren and Matt came over early in the morning and we got a shocking visit from our estranged father! He is normally holed up down at our beach house because he is trying to evade corona virus. He has been taking advantage of his beached-quarantine; I think he’s secretly loving his self isolation…lots of time for Netflix, beach walks, and his famous margaritas.
The day started off with a delicious meal cooked by yours truly. Caroline also graciously helped prepare part of the meal…what an angel!
Breakfast: Omelets and Homefries
Preparation
Omelet Ingredients: Diced Tomatoes, Diced Onions, Chopped Up Mushrooms, and Grated Cheese.
Also a whopping 18 eggs whisked up with salt and pepper.
In the process of making omelets. A strenuous process…you have to make sure that pan is hot, but not too hot. Also don’t get distracted and leave the omelet on the pan too long! One self-recommendation for next time is to pre-cook the mushrooms and onions so that they aren’t too hard in the omelet.
